This is a Jamie Oliver recipe that I found in his book "Jamies America". I love love love Cajun dishes and this is no exception. Originally it is made with gator meat, but her in Denmark that is not buyable anywhere, but chicken or pork will do just fine.
Cajun Pork with Sweet Potato and Salsa - serves 2
Ingredients:
2 large sweet potatos
8 ounces pork filet or chicken breast
Marinade:
½ tsp cayenne pepper
½ tsp paprika
½ tsp salt
freshly ground pepper
½ tsp dried oregano
½ tsp dried thyme
1 clove garlic
1 tbsp olive oil
½ tsp mustard
Salsa:
3 spring onion
3 tomatos
1 large handfuld parsley
½ tsp sambal oelek (chili paste)
½ tbsp apple cider vinegar
1 tbsp olive oil
½ tsp salt
Instructions:
1. Mix all the ingredients for the marinade. Cut the meat into ½ inch strips and mix with the marinade. Leave in the fridge for an hour or longer.
2. Clean and dry of the sweet potatos and wrap them in tin foil. Bake 1-1½ hour at 400 F until they are tender.
3. Cut the tomatos in quarters and take out the soft part. Cut into small cubes. Cut the spring onion finely.
4. Mix tomato, spring onion, sambal oelek, vinegar, olive oil and salt and set aside.
5. Heat up a wok and stir fry the meat in the oil.
6. Unwrap the sweet potatos and cut a cross in both of them. Open them a bit. Top with meat and salsa and serve.
